A fresh and elegant dessert: the sweetness of vanilla tinged with green and a tangy red fruit coulis.

panna cotta with spirulina

Ingrédients

400 ml single cream (or plant-based cream)

1 vanilla pod (seeds)

2 gelatine leaves (or agar-agar for vegan)

1 tsp spirulina powder

200 g red berries (fresh or frozen)

1 tbsp honey or agave syrup

Preparation

Soften the gelatine in cold water.

Heat the cream with the vanilla and honey without boiling.

Remove from the heat, add the squeezed gelatine and mix well.

Whisk in the spirulina to even out the colour.

Pour into small glasses and leave to set in the fridge for 4 hours.

Blend the red berries and agave syrup, then pour over the panna cotta before serving.
