Ingredients

400 ml liquid cream (or vegetable cream) 1 vanilla pod (seeds) 2 gelatine leaves (or agar-agar for vegans) 1 tsp spirulina powder 200 g red fruit (fresh or frozen) 1 tbsp honey or agave syrup

Preparation

Soften the gelatine in cold water. Heat the cream with the vanilla and honey without bringing to the boil. Remove from the heat, add the wrung-out gelatine and mix well. Whisk in the spirulina to even out the colour. Pour into verrines and leave to set in the fridge for 4 hours. Mix the red fruit and agave syrup and pour over the panna cotta before serving.
