A fresh, elegant dessert: the sweetness of green-tinted vanilla with a tangy red fruit coulis.

Ingredients

400 ml liquid cream (or vegetable cream)

1 vanilla pod (seeds)

2 sheets gelatin (or agar-agar for vegans)

1 tsp spirulina powder

200 g red fruit (fresh or frozen)

1 tbsp. honey or agave syrup

Preparation

Soften gelatine in cold water.

Heat cream with vanilla and honey without boiling.

Remove from heat and add the gelatine, mixing well.

Whisk in spirulina to even out the color.

Pour into verrines and chill for 4 h.

Blend red berries and agave syrup and drizzle over panna cotta before serving.
