Mediterranean lentil and spirulina bowl
A fresh, colourful recipe full of vitality!

Ingrédients
Ingredients (serves 2):
150 g green lentils
1 beefsteak tomato
1/2 red onion
1/2 cucumber
1/2 yellow pepper
80 g feta cheese
A handful of black olives
A few fresh mint leaves
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon ground cumin
Salt & pepper
💚 1 teaspoon spirulina in strands or powder (preferably artisanal 😉)
Preparation
Rinse the lentils, then cook them in three times their volume of cold (unsalted) water for 20-25 minutes. Drain and leave to cool.
Cut the tomato, cucumber, pepper and onion into small pieces.
Crumble the feta cheese and chop the mint.
In a salad bowl, mix the lentils, vegetables, olives, feta and mint.
Season with lemon juice, olive oil, cumin, salt and pepper.
Just before serving, add a touch of spirulina on top. It's the green cherry on top of the bowl! 🌱
