Bowl mediterraneenn lentil spirulina

Ingredients

Ingredients (2 people):
150 g green lentils

1 beef heart tomato

1/2 red onion

1/2 cucumber

1/2 yellow bell pepper

80 g feta cheese

A handful of black olives

A few fresh mint leaves

1 tablespoon lemon juice

1 tablespoon olive oil

1/2 tsp ground cumin

salt & pepper

💚 1 tsp spirulina twigs or powder (preferably artisanal 😉)

Preparation

Rinse the lentils, then cook in 3 times their volume of cold (unsalted) water for 20-25 minutes. Drain and leave to cool.

Cut the tomato, cucumber, bell pepper and onion into small pieces.

Crumble the feta and chop the mint.

Mix lentils, vegetables, olives, feta and mint in a salad bowl.

Season with lemon juice, olive oil, cumin, salt and pepper.

Just before serving, add a touch of spirulina on top. It's the green cherry on the bowl! 🌱
